Going green on Earth Day!

I have avoided "yucky" foods for a long time.  However, I've found as I've aged and health has become far more important, I've been trying all sorts of previously "yucky" foods. 

Today,  I took the leap into the avacado.   While I wasn't impressed with the taste alone, I actually really liked it once I turned it into guacamole.  

As a diehard weight watchers follower, I'm thrilled that this "free" goodness will add bulk to my serving of tortilla chips, as well as all of the good health benefits, of course.  Another plus is that I will now appear much less of a food snob as I delve into guacamole at gatherings. 

As of today I am no longer a guacamole Virgin.   Tomorrow,  I shall brave eggplant... maybe!
